Meat and Potato Fiesta

Ingredients:

2 lb pkg frozen hash brown potatoes

1 lg onion; chopped

1/2 lb deli meat; cut into ˝" diced pieces 

	(ham, chicken or smoked turkey)

3 tablespoons butter

1 (9oz) can Frito-Lay's Cheddar Cheese Dip

1 cup mayonnaise

1 (2oz) jar sliced pimentos; drained

1/4 cup sliced green onions

Fritos Corn Chips

Finely grated cheddar cheese





Instructions:

In a large bowl, partially defrost potatoes. Sauté chopped onion and meat

in butter, add potatoes, cheese dip and mayonnaise and combine. Stir in

pimentos and green onions. Pour mixture into a 3-qt casserole dish. Top 

with Fritos; sprinkle lightly with cheese. Bake at 350°F for 30 minutes

or until brown around the edges. Garnish with additional green onions

and red pepper.
