Southwestern Smoked Turkey & Bean Pasta

Ingredients:

2 14½ oz cans chicken or vegetable broth

1 cup uncooked orzo pasta

1 15/16 oz can black beans; rinced and drained

1 cup frozen corn kernels

1 cup diced deli smoked turkey breast or chopped cooked chicken

3/4 chunky salsa

1 teaspoon cumin

1/4 cup cilantro

1 cup shredded Monterey Jack

Sour Cream





Instructions:

Bring broth to a boil, covered, in a large deep skillet over high heat.

Add orzo and simmer, uncovered, for 7 minutes. Stir in beans, corn,

salsa, and cumin and return to a boil over high heat. Simmer for 3

minutes, stirring frequently. Stir in cilantro and ladle into shallow

soup bowls. Top with cheese. Serve with sour cream, if desired.



Serving Suggestion: Serve with tortilla chips or warm corn tortillas.
